Like most people, if I don’t have breakfast in the morning I can get “hangry” (hungry + angry) really quickly! With so many events to go to around South Florida, I knew I had to find the right (and delicious) solution. So today I tried a twist on my typical breakfast sandwich that usually consists of a fried egg and cheese. I wanted a sufficient breakfast to get me through to lunch and to keep me on my clean eating routine, so I substituted my fried egg for a poached egg (poaching an egg is a great alternative since it is cooked in water, not oil) and the cheese for sautéed spinach! Poaching an egg for the first time seemed a little risky… but with some coaching (and a little help from Google) I got it on my first try!
Coconut Oil benefits:
- Although olive oil is good for you, coconut oil is a better alternative for cooking with medium-high heat since its chemical structure remains more stable (all the good stuff doesn’t burn out by the time you actually get to consume it)
- Fatty acids in coconut oil help to reduce appetite
